The article analyzes an approach to modeling the mechanism of grabbing and dragging the harvester head in the process of pruning branches of coniferous and deciduous trees of complex shapes in various natural and industrial conditions. The type of trees under consideration differs in different geometric shapes of trunks and shapes of branch sizes. The presented modern grabbing, cutting and bucking devices (harvester heads) are not effective enough for processing such trees in various conditions. To solve these problems, head design projects are required that meet the tasks set. To do this, it is necessary to simulate the process based on the original tree models with realistic geometry. The main designs of harvester heads have original derivative models that perform basic functions such as feeding the barrel using a feeding mechanism and cutting branches with grab knives. These models, identified experimentally, make it possible to predict well the interactions between different parts of the block and trees. The simulation results are in good agreement with the observed behavior of the actual operation of the system and represent a design support tool for the development of innovative concepts of harvester blocks. At this stage, there is a need to simulate and analyze two types of feeding mechanisms when pruning branches. The feeding mechanism of the roller harvester head and the pulse type head. The article discusses the experience of testing machine technology for logging forest care, and demonstrates its capabilities. The approbation was carried out on forest plots located in the Perm Region, where the company LLC Ponsse (the official representative of the Finnish company PONSSE in Russia), a group of enterprises PCBC, LLC Reid, and LLC PKF Gidroservice (dealer of PONSSE in the Perm Region) laid trial areas to analyze the possibilities of various brands Ponsse machines, operator training, and refinement of optimal technological techniques. The article presents the results of a patent and information search for developments on the industrial technology of the Japanese dessert mochi. The data search was carried out in the search system of the Federal Institute of Industrial Property, the international database of the latest publications “Google-scholar”, the domestic electronic library database Elibrary.ru, and the Google search engine. The work was carried out in the process of studying the discipline “Theoretical foundations of scientific research work” in the direction of training 04/19/03 “Food products of animal origin” profile “Technology of dairy products”. As a result of our research, we obtained useful information about the production technology of the Japanese dessert mochi, the recipe for the production of dough and filling based on curd cheese. It has been established that the filling of mochi determines its taste properties. Traditionally, beans, sweet potatoes, fruits and nuts are used as filling. At the same time, traditional cakes do not contain flavoring fillers or sweeteners. However, in other countries, to adapt to market needs, the filling recipe is supplemented with flavoring components: coffee, vanilla, etc. In addition, data was obtained on the technological properties of rice necessary for the production of mochi. It has been established that the stickiness of rice, which determines the required consistency of the dough, depends on the amylose content in it. The data obtained allow us to determine further prospects and tasks of our research work.

The negative adverse effects of intensive agricultural production on food safety and the environment are presented. It has been substantiated that the use of microbial inoculants in plant growing is a viable alternative to traditional industrial technologies based on the use of agrochemicals such as pesticides, inorganic fertilizers, herbicides, etc. and leading to destructive effects on human health due to the consumption of unsafe food. The classification of microbial inoculants for seed treatment according to functional characteristics has been developed. It has been established that in the seed treatment with biological preparations, the most common method is treatment with microbial inoculants containing nodule bacteria. The list of biopreparations used in practice for plant protection is presented, as well as the main characteristics of methods for applying them to seed. It has been determined that the technological effectiveness of seed treatment with microbial inoculants depends on many factors that ensure the survival of microorganisms during seed processing and storage, the dominant ones being the formulation of the inoculant, as well as its ability to multiply in the spermosphere, infect the root system, and in some cases, the rhizosphere of plants.

The republic is taking measures of state support for farms of various forms of ownership, which contribute to the preservation and increase in the number of Yakut livestock. Thanks to the measures taken over the past five years, the number of Yakut cattle in the State Enterprise of the Republic of Sakha (Yakutia) “Yakut Cattle” has increased by 2.5 times. 10 colors were identified, the main ones being black and motley - 43.3%, black - 21.4%, white and motley - 16.6% and others 18.7%. The article presents the results of a study of the genetic structure of Yakut cattle by the Gene pool state enterprise of the Republic of Sakha (Yakutia) “Yakut Cattle” (n=366). To study the population genetic structure of Yakut cattle, microsatellite analysis of 15 STR loci was used. In the three studied populations, the most variable loci are TGLA53 (11 alleles), TGLA227 and TGLA122 (8 alleles), and the least variable are BM1818, BM1824, INRA023 (3 alleles). The greatest genetic diversity was noted among the cattle of the Syuldyukar site. It was found that in the Yakut cattle populations of the “Tastaakh” and “Kylys” areas, the observed heterozygosity is higher than expected, the Fis index has a negative value. In the sample of animals from the “Suldyukar” site, the observed heterozygosity (Ho=0.598±0.045) is less than expected (He=0.607±0.035), and the Fis index has a positive value (Fis=0.022±0.035), which indicates a lack of heterozygotes and is confirmed by phenotypically lower diversity livestock color options.

The present scientific article analyzes the diet of young people in Yakutia, taking into account the significance of fish products in their diet. The study was based on a survey of 760 students, which allowed identifying the frequency of fish consumption and preferences in their selection. Biochemical analysis of fish was conducted, and the results were compared with the physiological requirements norms of the population of the Russian Federation. It was found that fishery natural raw materials have high nutritional value, confirming their importance in the diet. The obtained data can be used for the development of recipes for fish culinary products, considering consumer preferences and the needs of the population of Yakutia.

The article is devoted to the actual problem of processing secondary dairy raw materials. The article presents the calculation of raw materials and evaluation of the quality indicators of buttermilk and curd whey obtained at the farm Kharlampyev M.A. The data obtained allowed us to choose promising areas for their processing. The article presents the scheme developed by the authors for the depth of processing of whole milk. The paper proposes the inclusion of cottage cheese from a mixture of skimmed milk and buttermilk and the drink Byrpah from curd whey in the production range of the farm. It is shown that the use of secondary dairy raw materials technology makes it possible to obtain high-quality and safe dairy products that meet regulatory requirements and are not inferior in organoleptic characteristics to traditional cottage cheese and Byrpah. Calculations of production costs and retail and wholesale prices with a projected profit of 15% indicate a high economic benefit from the sale of cottage cheese Stolovyj and Byrpah products from curd whey.

The article presents the results of a comparative analysis of literature data on the chemical and fatty acid composition of cow's milk and milk of Yakutian cattle. It was found that the milk of Yakutian cattle had a higher content of dry substances, including a mass fraction of fat up to 6%. According to analysis of the fatty acid composition milk fat of Yakutian cattle is fully composed, contains a large amount of vital linoleic, linolenic and arachidonic fatty acids. The article also provides data on the chemical composition of Honguri zeolite, which contains all essential trace elements. In addition, the authors revealed a wide use of zeolite as an unconventional feed additive to livestock feed and its positive effect on their bioelement balance and feed digestibility. On the above basis, the authors put forward a hypothesis about the possibility of using zeolite for heating oil during plasma deposition. Studies of the dynamics of acid and peroxide numbers indicate the ability of zeolite to adsorb oxidation products and free fatty acids contained in ghee. Data on the dynamics of the acid and peroxide number of ghee for 30 days at 3+2 0С in a polymer opaque leaky package are presented.

The results of studies of the physical properties of agricultural seeds over the past 100 years are summarized. Three periods of research have been identified: the first - the beginning of the 20th century before the Second World War; the second - from the Second World War to the 1990s; third - early 2000s to present. The relation is shown between conducting research on the physical properties of seeds and developing technologies for post-harvest processing and seed preparation. It is shown that the physical properties of seeds represent the starting points and are fundamental in the design of machines and technological processes for sowing, harvesting, post-harvest processing and pre-sowing preparation of seeds. The physical properties of seeds that can be used in seed separators have been determined: dimensional characteristics, shape, density, surface condition, ability to float to the surface of a liquid or fluidized layer, color, elasticity, electrical conductivity, chlorophyll fluorescence. The size characteristics of agricultural seeds are generalized. crops, as well as weed seeds. The features of seed separation by thickness, width and length are described. It is shown that in the process of separation according to different characteristics, the shape of the grains has a significant influence on the process. It has been established that further development of seed preparation technologies based on existing knowledge about the physical properties of seeds is ineffective. To develop technologies for the preparation of new generation seeds, it is necessary to conduct systematic research using seed materials in various soil and climatic zones of countries.
